Method
 

Preparation
  1. Chop your veggies and protein, so everything’s ready to go.
Cooking
  1. In a large pot, heat some oil, then add onions, garlic, carrots, and celery. Cook until they’re tender and aromatic.
  2. Pour in your stock and bring to a boil.
  3. Toss in beans, lentils, or meat along with any grains you choose.
  4. Stir in your herbs, salt, and pepper; adjust to taste.
  5. Let it bubble on low for 20-30 minutes (or longer for richer flavor).
Final Touch
  1. If using, swirl in cream or sprinkle cheese before serving.

Notes

Great for batch cooking and using up pantry staples. Store leftovers in airtight containers in the fridge for 3-4 days or freeze for up to 3 months. Reheat on the stove or in the microwave.
