Ingredients
  

Apple Filling
  • 5 pounds apples (peeled, about 9-11 large apples; use a variety of flavors) A mix like Granny Smith, Gala, and Golden Delicious works wonders for flavor.
  • 1/2 teaspoon lemon zest (from 1 small lemon) Use a microplane grater to zest your lemon.
  • 3 tablespoons lemon juice (from 1 small lemon)
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar (packed)
  • 5 tablespoons all-purpose flour See notes if you are making this without cooking the apples.
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract
Cobbler Topping
  • 2 1/2 cups all-purpose flour (spooned and leveled)
  • 1 1/2 cups granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 cup buttermilk Cheater version okay.
  • 1/2 cup cold butter (chopped into chunks)
  • 2 tablespoons sugar (granulated or raw sugar or both)
For Serving
  • 1 scoop vanilla ice cream Not optional 😉.

Method
 

Preparation
  1. Choose those apples wisely! A mix like Granny Smith, Gala, and Golden Delicious works wonders for flavor.
  2. Use a microplane grater to zest your lemon straight into a high-sided skillet.
  3. Squeeze in 3 tablespoons of lemon juice.
  4. Peel and slice your apples about 1/8 inch thick, tossing them in the skillet with lemon juice to avoid browning.
Cooking
  1. (This step is optional!) Set your skillet over medium heat and sprinkle the apples with sugars and spices. Stir gently and let it simmer for 20 minutes while you maintain an eye on it, stirring every few minutes.
  2. Once the apples are tender but still firm enough to hold their shape, remove from heat, add vanilla, and transfer to a 9x13 inch casserole dish.
  3. Preheat the oven to 375°F as you prepare the cobbler topping.
Making the Topping
  1. In a bowl, whisk together flour, sugar, salt, and baking powder.
  2. Whisk buttermilk and egg in a separate bowl, then combine with the flour mixture, forming a shaggy dough.
  3. Pour the topping over your apple mixture evenly.
  4. Scatter chopped butter pieces on top and sprinkle with sugar.
Baking
  1. Pop it in the oven for 45-55 minutes until golden brown and bubbly. If you’re feeling fancy, broil it for an extra crispy edge. Just don’t leave it unattended—kitchen fires aren’t cool.
Serving
  1. Wait about 15 minutes (or not, who are we kidding?) before serving with a generous scoop of vanilla ice cream!

Notes

This cobbler is best served warm directly from the oven. You could even drizzle some caramel sauce or a sprinkle of nuts on top if you’re feeling extra fancy.
