Ingredients
  

Cinnamon Apples
  • 3-4 pieces red gala apples, diced Use fresh apples for the best flavor.
  • 1.5 tablespoons granulated sugar
  • 1.5 teaspoons ground cinnamon
Crumble Topping
  • 120 g all-purpose flour
  • 200 g dark brown sugar
  • 1 teaspoon ground cinnamon
  • 85 g butter (room temperature)
Vanilla Cinnamon Cake
  • 340 g all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 2.25 teaspoons baking powder
  • 0.5 teaspoon salt
  • 125 g butter (room temperature) Room temperature for better mixing.
  • 225 g granulated sugar
  • 3 pieces eggs (room temperature)
  • 225 g sour cream (14-18%, room temperature) Ensure it’s at room temperature.
  • 40 g vegetable oil (e.g., canola oil)
  • 1.5 teaspoons vanilla extract
Maple Glaze
  • 125 g powdered sugar
  • 1 tablespoon maple syrup
  • 1 teaspoon sour cream
  • 0.5 teaspoon vanilla extract
  • 1-2 teaspoons water Add until desired consistency.

Method
 

Cinnamon Apples
  1. In a bowl, toss the diced apples with granulated sugar and ground cinnamon. Set aside.
Crumble
  1. In a separate bowl, mix the 120 g of flour, dark brown sugar, and 1 tsp of ground cinnamon.
  2. Cut in 85 g butter until crumbly. Chill this mix while you prep the cake.
Vanilla Cinnamon Cake
  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. In a large bowl, cream together 125 g butter and 225 g granulated sugar until light and fluffy.
  3. Add your 3 eggs, sour cream, vegetable oil, and vanilla extract. Mix until smooth.
  4. In another bowl, whisk together 340 g flour, ½ tsp cinnamon, baking powder, and salt.
  5. Gradually add it to the wet ingredients until just combined.
  6. Gently fold in your cinnamon apples.
Maple Glaze
  1. Whisk together 125 g powdered sugar, 1 tbsp maple syrup, 1 tsp sour cream, and 1/2 tsp vanilla extract.
  2. Add water until you reach your desired consistency.

Notes

Serve warm or at room temperature with a sprinkle of powdered sugar. Pair it with vanilla ice cream for a delightful treat.
