To Make the Crumb Topping
- In a bowl, mix the flour, brown sugar, cinnamon, and salt together.
- Cut in the cold butter cubes until the mixture resembles coarse crumbs. Set aside to chill while you tackle the cookies.
To Make the Cookies
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In another large bowl, cream the softened butter, brown sugar, and granulated sugar until fluffy.
- Beat in the egg, vanilla extract, and apple butter until blended.
- Gradually blend in the flour mixture, then fold in the chopped apples.
- Drop rounded spoonfuls onto prepared baking sheets and top each cookie with the crumb mixture.
- Bake for 12-15 minutes until they are golden.
Notes
Serve cookies warm with a drizzle of caramel sauce or a scoop of vanilla ice cream for an extra special treat. Store leftovers in an airtight container for up to a week. To extend their life, freeze them with parchment paper between layers.
