Ingredients
  

For the crumb topping
  • 1 cup all-purpose flour for topping
  • 1/2 cup light brown sugar firmly packed
  • 1 teaspoon ground cinnamon
  • pinch salt
  • 6 tablespoons unsalted butter cold and cut into small cubes
For the cookies
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup light brown sugar firmly packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup apple butter *optional
  • 2 medium apples peeled and chopped into small pieces (about 2 cups)

Method
 

To Make the Crumb Topping
  1. In a bowl, mix the flour, brown sugar, cinnamon, and salt together.
  2. Cut in the cold butter cubes until the mixture resembles coarse crumbs. Set aside to chill while you tackle the cookies.
To Make the Cookies
  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another large bowl, cream the softened butter, brown sugar, and granulated sugar until fluffy.
  4. Beat in the egg, vanilla extract, and apple butter until blended.
  5. Gradually blend in the flour mixture, then fold in the chopped apples.
  6. Drop rounded spoonfuls onto prepared baking sheets and top each cookie with the crumb mixture.
  7. Bake for 12-15 minutes until they are golden.

Notes

Serve cookies warm with a drizzle of caramel sauce or a scoop of vanilla ice cream for an extra special treat. Store leftovers in an airtight container for up to a week. To extend their life, freeze them with parchment paper between layers.
