  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced Granny Smith recommended for tartness
Topping
  • 2 tbsp granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch pan with parchment paper.
  3. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  4. Add in the egg and vanilla extract, mixing until smooth.
  5. Whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually combine the dry ingredients with the wet mixture, mixing until just combined.
  7. Fold in the finely diced apple.
Baking
  1. Spread the batter evenly in the prepared pan.
  2. Mix topping sugar and cinnamon, then sprinkle over the batter.
  3. Bake for about 25-30 minutes until edges are golden and a toothpick inserted comes out clean.
  4. Cool completely before cutting.

Notes

Serve warm or at room temperature. For an extra kick, drizzle with caramel sauce or add vanilla ice cream. Store in an airtight container for 3-4 days at room temperature or up to a week in the fridge.
