  • 8-10 slices bacon, cooked and chopped For crispy texture.
  • 1 tbsp butter or olive oil For sautéing.
  • 1 large onion, diced Adds flavor and sweetness.
  • 2 large carrots, peeled and sliced For additional sweetness.
  • 4 cups chicken broth Base of the soup.
  • 1-2 tsp salt Adjust to taste.
  • 1 tsp black pepper
  • 1 tsp garlic powder Alternatively, use 4 cloves minced garlic.
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes Optional for a kick.
  • 16 oz gnocchi Soft dumplings.
  • 2 cups heavy cream or half-and-half For creaminess.
  • 2 cups shredded cheddar cheese Medium or sharp for extra flavor.

Method
 

Cooking Steps
  1. Cook bacon until crispy, then chop and set aside.
  2. In a large pot, heat butter or oil and sauté the onions and carrots until tender, about 5 minutes.
  3. Add chicken broth and bring to a simmer.
  4. Stir in the heavy cream, seasonings, and shredded cheese, stirring continuously to melt the cheese.
  5. Toss in the gnocchi and cook for 2 minutes or until soft.
  6. Mix in the bacon, adjust seasoning, and serve hot.

Notes

For best results, cook bacon in a cast iron skillet. Feel free to mix cheeses for different flavors. If desired, blend a portion of the soup for a thicker texture.
