Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
For the cheesecake filling
  • 2 packages cream cheese, softened (8 ounces each)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced Use fresh apples for best flavor, Granny Smith recommended
  • 1 cup caramel sauce Plus extra for drizzling
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar to prepare the crust. Press it down firmly into the bottom of the prepared pan.
  3. In a large mixing bowl, beat together cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in diced apples, caramel sauce, cinnamon, and nutmeg into the cream cheese mixture.
Baking
  1. Pour the filling over the prepared crust and bake for 30-35 minutes, or until the center is set.
  2. Let it cool completely before cutting into bars.
Serving
  1. Drizzle with additional caramel sauce before serving if desired.

Notes

These bars can be stored in an airtight container in the fridge for 5-7 days, or frozen for up to three months. Avoid rushing the cooling process for the best texture.
