  • 3 large eggs Separate the whites from the yolks.
  • 1/4 cup cream cheese Can be substituted with ricotta for variation.
  • 1/2 teaspoon baking powder Helps in achieving fluffiness.

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks into two different bowls.
  3. In the bowl with the egg whites, add the baking powder and whip until stiff peaks form.
  4. In the other bowl, mix the egg yolks with the cream cheese and any optional seasonings until well combined.
  5. Gently fold the egg white mixture into the egg yolk mixture until just combined.
  6. Spoon dollops of the mixture onto the prepared baking sheet to form cloud-like shapes.
Baking
  1. Bake for 25-30 minutes or until the tops are golden brown and firm.
  2. Allow to cool slightly before using as bread for sandwiches or toasts.

Notes

Keep in an airtight container in the fridge for up to 5 days or freeze for up to a month. Reheat in the oven for a few minutes to regain crispness.
