Preparation
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the egg whites from the yolks into two different bowls.
- In the bowl with the egg whites, add the baking powder and whip until stiff peaks form.
- In the other bowl, mix the egg yolks with the cream cheese and any optional seasonings until well combined.
- Gently fold the egg white mixture into the egg yolk mixture until just combined.
- Spoon dollops of the mixture onto the prepared baking sheet to form cloud-like shapes.
Baking
- Bake for 25-30 minutes or until the tops are golden brown and firm.
- Allow to cool slightly before using as bread for sandwiches or toasts.
Notes
Keep in an airtight container in the fridge for up to 5 days or freeze for up to a month. Reheat in the oven for a few minutes to regain crispness.
