  • 2 cups Potatoes, peeled and diced Cut into bite-sized pieces.
  • 2 cups Kale, chopped
  • 1 pound Spicy sausage or ground meat Cook until fully browned.
  • 1 cup Cream Added at the end for creaminess.
  • 4 cups Broth Vegetable or chicken broth can be used.
  • 1/2 cup Grated Parmesan For serving.
  • 1 loaf Crunchy bread For serving alongside.

Method
 

Preparation
  1. Peel and dice the potatoes into bite-sized pieces.
  2. In a large pot, brown the sausage or ground meat until fully cooked.
  3. Add the diced potatoes and kale, then pour in the broth.
  4. Bring to a boil and let it simmer until the potatoes are tender.
  5. Stir in the cream once the potatoes are soft.
  6. Serve hot, topped with grated Parmesan, alongside some crunchy bread.

Notes

For thicker soup, mash a few potatoes while it simmers. Add crushed red pepper for extra spice!
