  • 1 cup Almond Flour Coconut flour can work too, but use less.
  • 1/4 cup Coconut Flour For that perfect texture — it complements almond flour.
  • 1 cup Erythritol Or swap with stevia or monk fruit sweetener.
  • 1 large Egg The magical binder!
  • 1 tsp Vanilla Extract Pure extract is a game-changer.
  • 1 tsp Baking Powder Mix this well to keep it lump-free.
  • 1/2 tsp Salt Just a pinch to elevate flavor.
  • 2 tsp Ground Cinnamon Add nutmeg for a flavor boost.
  • Additional Sweetener (optional) A light dusting of powdered erythritol makes it pretty!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix softened cream cheese and erythritol until smooth.
  3. Add the egg, vanilla extract, baking powder, salt, almond flour, and coconut flour. Stir until combined.
  4. Incorporate ground cinnamon into the mixture.
  5. Spread the mixture onto parchment paper, forming a thin layer.
Baking
  1. Bake for about 15-20 minutes until golden brown and crispy.
  2. Let cool, slice, and roll up!
  3. Dust with extra sweetener if desired.

Notes

Store in an airtight container in the fridge for up to 5 days. They also freeze beautifully! Reheat in the microwave or thaw in the fridge overnight.
