Ingredients
  

For the crust and topping
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
For the filling
  • 3 cups peeled and sliced apples (Granny Smith recommended)
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/4 teaspoon nutmeg
  • 1/2 cup oats optional, can swap for crushed nuts or chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a bowl, mix together the flour, baking powder, and salt. Set it aside.
  3. In another bowl, cream together the butter, granulated sugar, brown sugar, and vanilla extract until fluffy.
  4. Gradually add the dry ingredients to the wet mixture until combined.
  5. Press half of the dough into the bottom of the prepared dish.
  6. In a separate bowl, toss the sliced apples with cinnamon, nutmeg, and lemon juice. Layer the apple mixture over the dough.
  7. Crumble the remaining dough over the apples, then sprinkle oats on top.
Baking
  1. Bake for 40-45 minutes or until the top is golden brown.
  2. Allow the bars to cool before cutting them into squares.

Notes

Serve warm or at room temperature, preferably with vanilla ice cream. Store in an airtight container for 3-5 days at room temperature or up to a week in the fridge.
