For the Cake
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated apples
  • 1/2 cup chopped walnuts (optional)
For the Frosting
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add in eggs one at a time, followed by vanilla extract.
  5. Gradually add dry ingredients to wet mixture, stirring until just combined. Gently fold in grated apples and chopped walnuts if using.
Baking
  1. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
Frosting
  1. Beat together cream cheese and butter until smooth.
  2. Gradually mix in powdered sugar and a splash of vanilla until creamy.
Serving
  1. Wait for the cake to cool, then spread the frosting over the top. Slice and enjoy.

Notes

Store leftovers in an airtight container in the fridge for up to 4-5 days. For a more intense apple flavor, use a mix of apples. Make sure butter and cream cheese are softened to avoid lumps in the frosting. Don't overmix the batter after adding dry ingredients to keep the cake light and fluffy.
