  • 2 cups cooked chicken, shredded You can use any leftover chicken.
  • 2 cups mushrooms, sliced Any variety of mushrooms will work.
  • 4 cloves garlic, minced
  • 1 cup heavy cream For a dairy-free option, use coconut cream.
  • 1 cup shredded cheese (like mozzarella or cheddar) Cream cheese can be used for a richer flavor.
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sliced mushrooms, sautéing until they become tender.
  3. In a large mixing bowl, combine the cooked chicken, sautéed mushrooms, heavy cream, paprika, salt, and pepper.
  4. Transfer the mixture into a greased casserole dish and top generously with shredded cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  2. Garnish with fresh parsley if you’re feeling fancy and serve warm!

Notes

This casserole can be stored in the fridge for about 3-5 days or frozen for up to 3 months. Reheat in the oven or microwave before serving.
