Ingredients

  • 1 lb ground beef or lamb You can use either beef or lamb.
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped Fresh herbs enhance flavor.
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup onion, finely chopped
  • as needed Olive oil for frying

Method
 

Preparation
  1. In a large bowl, combine the ground meat, almond flour, Parmesan cheese, egg, garlic, parsley, oregano, salt, pepper, and onion. Mix well until all ingredients are combined.
  2. Form the mixture into meatballs, about 1-inch in diameter.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add the meatballs to the skillet in batches, cooking until browned on all sides and cooked through, about 10-12 minutes.
Serving
  1. Serve warm with a side of tzatziki sauce or your favorite keto-friendly side.

Notes

You can freeze the leftovers for up to three months. Reheat by thawing and warming in the skillet.
