  • 1 lb 1 lb sausage Use your choice of sausage (mild or spicy).
  • 8 oz 8 oz cream cheese Softened for easy mixing.
  • 1 can 1 can Rotel tomatoes (drained) Drain to prevent sogginess.
  • 1 cup 1 cup shredded cheese Use your favorite melty cheese.
  • 1/2 cup 1/2 cup almond flour For a low-carb binder.
  • 1 tsp 1 tsp garlic powder
  • 1 tsp 1 tsp onion powder
  • 1/2 tsp 1/2 tsp salt Adjust to taste.

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine sausage, cream cheese, and Rotel tomatoes. Mix until smooth.
  3. Add shredded cheese, almond flour, garlic powder, onion powder, and salt to the mixture. Stir until combined.
  4. Form the mixture into 1-1.5 inch balls and place them on the baking sheet.
Baking
  1. Bake for 20-25 minutes or until golden brown and cooked through.
  2. Let the sausage balls cool slightly before serving. Enjoy!

Notes

Serve with sour cream or fresh herbs. Store leftovers in the fridge for 3-5 days or freeze for up to a month. Reheat in the oven or microwave.
