- In a large pot, brown the ground beef over medium heat. Drain any excess fat.
- Add diced onion and minced garlic; sauté until the onion is translucent.
- Stir in the diced tomatoes, beef broth, and Italian seasoning. Bring to a boil.
- Reduce heat and let simmer for about 15-20 minutes.
- Stir in the ricotta cheese, and season with salt and pepper.
- Serve hot, topped with mozzarella cheese and fresh parsley.
