  • 4 tbsp unsweetened cocoa powder Use high-quality cocoa powder for a deeper chocolate flavor.
  • ½ tsp baking powder
  • 3 tbsp erythritol Adjust sweetness to taste; can substitute with other keto-friendly sweeteners.
  • 1 pinch salt Elevates the flavors.
Wet Ingredients
  • 1 large egg Beaten until soft and fluffy for a nice rise.
  • 2 tbsp heavy cream Can be substituted with coconut milk for a dairy-free option.
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a bowl, combine the erythritol and cocoa powder. Set aside and reserve 1 tsp of this mixture for serving (optional).
  3. In a separate bowl, beat the egg until it's soft and fluffy.
  4. Pour the beaten egg into the erythritol-cocoa mixture, and mix in the baking powder, vanilla, and heavy cream. Stir in a pinch of salt.
Baking
  1. Grease 2 muffin cups. Gently distribute the batter evenly into the cups.
  2. Bake for 10 minutes. Remove from oven once done and avoid overbaking to keep the center gooey.
Serving
  1. Serve on a plate, sprinkled with your reserved cocoa-erythritol mixture, if desired.

Notes

Let the cake cool for a minute before diving in to preserve the lava-like goodness. Serve with a dollop of whipped cream or a sprinkle of berries for added flair.
