Ingredients
  

Meatballs
  • 2 pounds ground turkey (or ground beef or pork) Any type of meat can be used.
  • 1 each egg Helps bind the meatballs together.
  • ¾ cup shredded mozzarella cheese Adds flavor and moisture to the meatballs.
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
Casserole Assembly
  • 1 cup low-carb tomato sauce (no added sugar)
  • 1 cup shredded mozzarella cheese To top the casserole.
  • ½ cup grated parmesan cheese For topping, adds a rich flavor.
  • 1 each Fresh basil or parsley, for garnish Optional but recommended for freshness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground turkey, egg, ¾ cup mozzarella, and seasonings. Mix until just combined.
  3. Roll the mixture into 1.5-inch meatballs and place them on the sheet. Bake for 25 minutes until cooked through.
  4. Move the baked meatballs to a casserole dish.
Assembly and Baking
  1. Top the meatballs with tomato sauce, the remaining mozzarella, and parmesan.
  2. Bake uncovered for 15–20 minutes until the cheese is melted and bubbly. Broil for an additional 2–3 minutes for extra browning.
  3. Let it rest for 5 minutes, then garnish with basil or parsley and serve hot.

Notes

This casserole can be made ahead of time and stored in the fridge for up to 3 days or frozen for up to a month. Reheat covered with foil to keep it moist.
