  • 1 cup peanut butter Use drippy peanut butter for best results.
  • 1/2 cup sweetener (such as erythritol) You can also use monk fruit or stevia.
  • 1 egg For a vegan option, replace with flaxseed meal mixed with water.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 12 Chocolate kisses or sugar-free chocolate for topping Don't skip the kiss for added indulgence!

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, sweetener, egg, vanilla extract, and baking soda. Mix until smooth.
  3. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake in the preheated oven for 10-12 minutes.
  2. Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
  3. Allow to cool before serving.

Notes

These cookies can be stored in the fridge for a week or frozen for up to three months. For thicker cookies, chill the dough for 30 minutes before rolling. Feel free to add chopped nuts for texture.
