Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, sweetener, egg, vanilla extract, and baking soda. Mix until smooth.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
Baking
- Bake in the preheated oven for 10-12 minutes.
- Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
- Allow to cool before serving.
Notes
These cookies can be stored in the fridge for a week or frozen for up to three months. For thicker cookies, chill the dough for 30 minutes before rolling. Feel free to add chopped nuts for texture.
