  • 4 large large bell peppers Any color you prefer
  • 1 pound ground beef Can be substituted with turkey or chicken
  • 1 cup shredded cheese Use mozzarella, cheddar, or your favorite cheese
  • 1 onion, chopped Adds flavor and sweetness
  • 2 cloves garlic, minced Toasted for extra flavor
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Fresh herbs for garnish (optional) Basil or parsley works well

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the onion and garlic until softened.
  4. Add the ground beef and cook until browned. Stir in the Italian seasoning, salt, and pepper.
  5. Remove from heat and stir in half of the cheese.
  6. Stuff the mixture into each bell pepper.
Baking
  1. Place stuffed peppers in a baking dish and top with the remaining cheese.
  2. Bake for 25-30 minutes, until the peppers are tender and the cheese is bubbly.
  3. Garnish with fresh herbs before serving.

Notes

Store leftovers in the fridge for 3-5 days or freeze for up to 3 months. Reheat in the oven until warm and bubbly. For extra heat, consider adding red pepper flakes or jalapeños.
