Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions, carrots, celery, and bell pepper. Sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for an additional minute.
Cooking
  1. Add the cabbage, diced tomatoes, and vegetable broth. Bring to a boil.
  2. Reduce the heat to low and add the salt, pepper, oregano, and thyme. Simmer for 30 minutes, or until the cabbage is tender.
  3. Taste and adjust seasoning if needed. Serve warm.
