Ingredients

  • 1 tsp agave syrup
  • 1 tbsp fine sea salt
  • 0.5 lime Zest of ½ lime
  • 1.5 oz tequila (blanco or reposado)
  • 0.5 oz coconut liqueur (or Cointreau)
  • 1 oz freshly squeezed lime juice
  • 2 oz pineapple juice
  • 0.25-0.5 oz agave syrup (or simple syrup) adjust to taste
  • 1 oz canned coconut milk (or ½ oz coconut cream)
  • 1 slice pineapple wedge (for garnish) optional
  • 1 slice lime slice (for garnish) optional
  • 1 leaf pineapple leaf (optional garnish)

Method
 

Preparation
  1. Brush the rim of the glass with agave syrup.
  2. On a small plate, combine sea salt and lime zest. Dip the glass to coat the rim and set aside.
Mixing
  1. In a cocktail shaker, add the tequila, coconut liqueur, lime juice, pineapple juice, agave syrup, and coconut milk.
  2. If the coconut milk is super thick, use a handheld frother to mix it smoothly.
Shaking and Serving
  1. Toss in a handful of ice and shake vigorously for a few seconds.
  2. Strain the mix into your prepared glass and garnish with a pineapple wedge and lime slice. Cheers to that!

Notes

This cocktail is best enjoyed fresh, but if you have leftovers, store in the fridge and consume within 24 hours. Avoid freezing to maintain texture. For variations, use coconut cream instead of coconut milk for vegan options or add passion fruit juice for extra zing.
