  • 1 kg potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 liter vegetable broth
  • 200 ml cream Can be substituted with coconut or almond milk for a dairy-free option.

  • to taste pepper
  • for garnish Fresh parsley

Method
 

Preparation
  1. In a large pot, sauté the onion, carrots, and celery until softened.
  2. Add the diced potatoes and vegetable broth, then bring it to a boil.
  3. Reduce heat and let it simmer until the potatoes are tender, about 20 minutes.
  4. Blend the soup until creamy, then stir in the cream.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

For an extra creamy experience, blend part of the soup and leave some chunks for texture. Fresh herbs like thyme or dill can elevate the flavor.
