Cooking the Pasta
- Cook the pasta according to package instructions; drain and set aside.
Preparing the Bacon and Onions
- In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
- In the same skillet, add sliced onions and sauté until caramelized, about 10-15 minutes. Add the minced garlic and cook for another minute.
Making the Sauce
- Stir in the pumpkin puree, heavy cream, nutmeg, salt, and pepper. Bring the mixture to a simmer.
Combining the Dish
- Add the cooked pasta and bacon to the skillet, tossing to combine. Cook for an additional 2-3 minutes until heated through.
- Serve warm, topped with Parmesan cheese and fresh parsley.
Notes
For lighter version, swap heavy cream for half-and-half. Add red pepper flakes for heat or a splash of lemon juice for brightness.
