Ingredients
  

Pasta and Sauce Base
  • 8 ounces pasta (fettuccine or penne) Cook according to package instructions
  • 1 cup pumpkin puree Canned pumpkin works great
  • 1 cup heavy cream Can substitute with half-and-half for a lighter dish
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
Protein and Veggies
  • 4 strips bacon, chopped Cook until crispy
  • 1 large onion, thinly sliced Caramelize for deep flavor
  • 2 cloves garlic, minced Optional but recommended for flavor
Garnish
  • Parmesan cheese, for serving
  • Fresh parsley, for garnish

Method
 

Cooking the Pasta
  1. Cook the pasta according to package instructions; drain and set aside.
Preparing the Bacon and Onions
  1. In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
  2. In the same skillet, add sliced onions and sauté until caramelized, about 10-15 minutes. Add the minced garlic and cook for another minute.
Making the Sauce
  1. Stir in the pumpkin puree, heavy cream, nutmeg, salt, and pepper. Bring the mixture to a simmer.
Combining the Dish
  1. Add the cooked pasta and bacon to the skillet, tossing to combine. Cook for an additional 2-3 minutes until heated through.
  2. Serve warm, topped with Parmesan cheese and fresh parsley.

Notes

For lighter version, swap heavy cream for half-and-half. Add red pepper flakes for heat or a splash of lemon juice for brightness.
