Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 3 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup diced apples (peeled and cored) Use firm varieties like Granny Smith or Honeycrisp.
Cinnamon Sugar for Rolling
  • 1/4 cup sugar (for rolling)
  • 1 tsp ground cinnamon (for rolling)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs one at a time.
  4. In another bowl, combine flour, cream of tartar, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the diced apples gently.
Rolling and Baking
  1. In a small bowl, mix 1/4 cup sugar with 1 tsp cinnamon for rolling.
  2. Scoop tablespoon-sized balls of dough, roll them in the cinnamon sugar mixture, and place them on a baking sheet lined with parchment paper.
  3. Bake for 10-12 minutes or until the edges are lightly golden.
  4. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to a week or freeze for longer storage. Let thaw before enjoying.
