Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the eggs one at a time.
- In another bowl, combine flour, cream of tartar, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced apples gently.
Rolling and Baking
- In a small bowl, mix 1/4 cup sugar with 1 tsp cinnamon for rolling.
- Scoop tablespoon-sized balls of dough, roll them in the cinnamon sugar mixture, and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
