Ingredients
  

Main Ingredients
  • 2 oz gin Use your favorite gin.
  • 1 oz fresh lemon juice Freshly squeezed for best flavor.
  • 1 oz simple syrup Adjust sweetness to taste.
  • 6-8 pieces fresh raspberries For best flavor, use fresh raspberries.
  • 1 each egg white For a vegan option, substitute with 1 oz aquafaba.
  • Ice for shaking and chilling Ice Use plenty of ice for chilling.
Optional Garnish
  • 1 dash Angostura bitters For garnish, add a dash to the foam (optional).

Method
 

Preparation
  1. Place your serving glass in the freezer to keep your cocktail refreshingly cold.
  2. In a cocktail shaker, combine the raspberries and simple syrup. Crush the raspberries into a juicy pulp using a muddler or the back of a spoon.
Mixing
  1. Pour in the gin, lemon juice, and egg white (or aquafaba). No ice just yet!
  2. Seal the shaker and shake vigorously for about 15 seconds to emulsify the egg white, creating a thick foam.
  3. Add a handful of ice to the shaker and shake for another 15-20 seconds until the shaker feels icy cold.
Serving
  1. Using a fine mesh strainer, double strain the cocktail into your chilled glass to remove raspberry seeds.
  2. Top with a few fresh raspberries on a cocktail pick or a lemon twist.
  3. Optionally, add a dash of Angostura bitters to the foam for an extra layer of deliciousness.

Notes

This drink is best enjoyed fresh, but any leftovers can be stored in the fridge for up to a day (note that foam won't hold up well). Consider preparing raspberry base ahead of time for quick mixing at gatherings.
