Ingredients
  

Vegetables
  • 1 medium onion, diced Adds sweetness and depth of flavor
  • 2 medium carrots, diced For sweetness and color
  • 2 stalks celery, diced For texture and flavor
  • 2 cups your choice of greens (spinach, kale, etc.) For nutrition and color
Protein
  • 1 cup chicken, beans, or lentils Choose your favorite protein
Base
  • 4 cups vegetable or chicken broth For the soup base
Spices
  • 2 cloves garlic, minced Toasting adds great flavor
  • 1 teaspoon dried thyme For aromatic flavor
  • 1 tablespoon fresh parsley, chopped For garnish and flavor
  • 1 teaspoon salt To taste
  • 1 teaspoon black pepper To taste
Extras
  • 1 cup cream or coconut milk For a rich finish

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat.
  2. Sauté onions, carrots, and celery until tender.
  3. Add the garlic and spices, toasting the garlic.
Cooking
  1. Toss in your protein and cook until browned.
  2. Pour in the broth and let it simmer for about 20 minutes.
  3. Add greens and let them wilt into the warm mix.
  4. Blend or enjoy rustic if you prefer some chunkiness.
  5. Finish with a swirl of cream if desired.

Notes

Leftovers can be stored in the fridge for up to three days or frozen for up to three months. Use homemade broth for enhanced flavor.
