Preparation
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add in the eggs and vanilla extract, mixing well.
- In another bowl, combine the cream of tartar, baking soda, salt, and flour. Slowly add this to the butter mixture until well blended.
- Fold in the cinnamon for that snickerdoodle flavor.
- In a separate bowl, mix the diced apples with granulated sugar, cinnamon, lemon juice, and cornstarch.
Assembly and Baking
- Scoop a small amount of dough into each muffin tin, pressing it down to form a base.
- Add a dollop of the apple filling on top of the dough.
- Cover with a little more dough, ensuring the apple filling is snug.
- Bake for about 15-18 minutes or until golden brown. Let them cool a bit before taking them out.
Notes
Serve warm or at room temperature. Dust with powdered sugar or sprinkle cinnamon on top for decoration. Arrange on a beautiful plate to impress your guests. Can be stored in an airtight container at room temperature for 1-2 days or refrigerated for about a week.
