Notes
You can prepare the dumpling mixture in advance and refrigerate before cooking. For an extra crunch, add chopped veggies while sautéing onions. Substitute curry paste with your favorite store-bought sauce if necessary. To enhance creaminess, add vegan yogurt or more coconut milk just before serving.
