Dumpling Ingredients
  • 1 cup red or Puy lentils Rinse and cook according to package instructions.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons curry paste Use your favorite type.
  • 1 can coconut milk
  • Salt, to taste
  • Pepper, to taste
  • Fresh cilantro, for garnish Add before serving.

Method
 

Preparation
  1. Rinse and cook the lentils according to package instructions until tender.
  2. In a pan, sauté onion, garlic, and ginger until fragrant.
Cooking
  1. Mix in the curry paste and cook for a minute.
  2. Add cooked lentils and coconut milk. Season with salt and pepper.
  3. Form the lentil mixture into dumplings and cook in the curry sauce for 10 minutes.
  4. Serve hot, garnished with fresh cilantro.

Notes

You can prepare the dumpling mixture in advance and refrigerate before cooking. For an extra crunch, add chopped veggies while sautéing onions. Substitute curry paste with your favorite store-bought sauce if necessary. To enhance creaminess, add vegan yogurt or more coconut milk just before serving.
