  • 2 tablespoons olive oil For tossing vegetables.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon pepper Adjust to taste.
  • 2 tablespoons fresh herbs (like rosemary or thyme) Chopped.
Protein and Broth
  • 1 pound protein of your choice (chicken, tofu, lamb chop) Choose based on preference.
  • 1 cup vegetable broth For moisture and flavor during roasting.

Preparation
  1. Peel and chop root vegetables into bite-sized pieces.
  2. In a large bowl, toss the vegetables with olive oil, salt, pepper, and chopped herbs.
  3. Preheat the oven to 400°F (200°C).
Cooking
  1. Arrange the seasoned vegetables on a baking sheet without overcrowding.
  2. Place your chosen protein on top of the vegetables.
  3. Pour vegetable broth over everything.
  4. Roast in the preheated oven for 25-30 minutes or until golden and tender.
  5. Serve hot and enjoy.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for 2-3 months. Reheat slowly for best results.
