  • 2 cups Celery, chopped
  • 1 cup Onion, chopped
Broth
  • 6 cups Chicken, vegetable, or beef broth Homemade or low-sodium is preferred.
Proteins
  • 1 pound Chicken, beef, or beans Choose your protein based on preference.
Herbs and Seasonings
  • 1 teaspoon Thyme
  • 2 leaves Bay leaves
  • 1 tablespoon Parsley, chopped For garnish.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
  • 2 cloves Garlic, minced Toast for more flavor.
Starches
  • 2 cups Pasta, rice, or potatoes Cook until tender.

Method
 

Preparation
  1. Sauté the chopped vegetables in a large pot until softened.

Cooking

Notes

For a creamier stew, blend half and mix it back in. Leftovers keep well in the fridge for 3-4 days and can be frozen for up to three months.
